While Shawarma, Hummus, and Falafel are well-known, the UAE’s culinary scene offers many unique dishes that are beloved by locals and offer a taste of traditional Emirati cuisine. Here are three lesser-known yet highly cherished dishes from the UAE, along with their recipes.

1. Harees

Description:Harees is a traditional Emirati dish made from ground wheat and meat (usually chicken or lamb), slow-cooked until it reaches a creamy, porridge-like consistency. It is especially popular during Ramadan and festive occasions.

Recipe:

  • Ingredients:
    • 1 cup whole wheat
    • 500g boneless lamb or chicken
    • 5 cups water
    • 1 tsp salt
    • 1/2 tsp ground cinnamon
    • 1/4 cup ghee or butter
  • Instructions:
    1. Soak the wheat overnight. Drain and rinse.
    2. In a large pot, combine wheat, meat, water, and salt. Bring to a boil, then reduce heat and simmer for 2-3 hours, stirring occasionally.
    3. Remove meat, shred it, and return to the pot.
    4. Add cinnamon and ghee, stirring until well mixed. Serve warm.

2. Machboos

Description:Machboos is a fragrant rice dish similar to biryani, made with spiced rice, meat (chicken, lamb, or fish), and vegetables. It is seasoned with a blend of spices that give it a distinctive flavor.

Recipe:

  • Ingredients:
    • 2 cups basmati rice
    • 500g chicken or lamb, cut into pieces
    • 1 large onion, chopped
    • 2 tomatoes, chopped
    • 2 garlic cloves, minced
    • 2 tbsp baharat spice mix
    • 1 tsp turmeric
    • 1/4 cup chopped cilantro
    • Salt to taste
    • 3 cups water or chicken broth
  • Instructions:
    1. Rinse and soak rice for 30 minutes.
    2. In a large pot, sauté onions until golden. Add garlic, baharat, and turmeric, cooking until fragrant.
    3. Add meat and cook until browned. Stir in tomatoes and cilantro.
    4. Add rice, water/broth, and salt. Bring to a boil, then reduce heat and simmer covered until rice is cooked and meat is tender.
    5. Fluff rice with a fork before serving.

3. Balaleet

Description:Balaleet is a traditional Emirati breakfast dish consisting of sweetened vermicelli noodles flavored with cardamom, saffron, and topped with an omelet. It’s a delightful combination of sweet and savory flavors.

Recipe:

  • Ingredients:
    • 250g vermicelli noodles
    • 3 tbsp ghee or butter
    • 1/4 cup sugar
    • 1/2 tsp ground cardamom
    • A pinch of saffron
    • 3 eggs
    • Salt to taste
  • Instructions:
    1. Boil noodles until al dente. Drain and rinse.
    2. In a pan, melt ghee/butter. Add noodles, sugar, cardamom, and saffron. Cook, stirring until well mixed and sugar is dissolved.
    3. In a separate pan, scramble the eggs with a pinch of salt.
    4. Serve the sweetened noodles topped with scrambled eggs.
